Go on, you deserve it

When was the last time you had Peking duck?  More than a year ago?  Can’t remember?  Do yourself a favor and head to your favorite Chinese restaurant tonight.  Or do as I have, and head there three nights in a row.

Put a warm, springy pancake in the palm of one hand.  Use some scallions to spread the darkly sweet plum sauce.  Lay on slivers of duck meat and crispy skin.  Fold over the bottom of pancake to prevent spillage.  Wrap into a tight little parcel.  Enjoy.

Pour some beer.  Toast yourself and your position at the head of life’s rich pageant.

I have added Peking duck to my list of perfectly conceived foods.  It is a short list.  The only other item on it right now is the burrito.  I have a few other contenders in mind, but there’s no need for haste.  No, haste is the worst thing for it.
